It was my first time baking with cassava flour, and I must say, I'm impressed! Cassava flour is made from yuca, a root vegetable and it's the perfect alternative to wheat flour. The texture and taste are SPOT ON! This gluten-free, grain-free AND nut-free flour is a definite must-have in any pantry!
2 cups cassava flour
1 cup organic cashew butter
1/4 cup coconut oil, melted
1/2 cup maple syrup
1 scoop collagen peptides *see notes
1/4 cup chocolate chips
1 tsp vanilla extract
1 tsp baking soda
Pinch of sea salt
Preheat oven at 350° F.
Throw all ingredients in a bowl and mix with a hand mixer until the batter is fluffy.
Use an ice cream scooper to scoop up the dough and place on your baking sheet.
Set a timer for 10 minutes and keep an eye on them, they tend to burn fast - Enjoy!
